Choose melee if you enjoy reading attacks up close; choose sorcery if you prefer creating space and casting. Both can reach the early bosses. Your starting class is a head start, not a permanent lock: you can use another weapon or spell later when you meet its requirements.

Shared first steps
Follow the early Sites of Grace until you can level up and receive your steed. Explore Limgrave rather than forcing a boss immediately. Rest at a grace to recover flasks, spend runes before carrying too many, and check a weapon's required attributes before equipping it. Raise Vigor for more health; even a ranged character needs to survive mistakes.
Melee: learn one weapon
Start with the weapon you have, or use another whose Strength and Dexterity requirements you meet. Fight ordinary soldiers one at a time: block or dodge an attack, answer with one or two hits, then recover stamina. If using a shield, keep enough stamina to defend; if rolling, avoid excessive equipment load.
Explore mines for smithing materials and strengthen a weapon you like. For levels, meet its requirements first, then balance Vigor with the attributes it actually scales with. If a boss is too fast, return with a better weapon or more health rather than spending every point on damage.
Sorcery: make space and manage FP
Astrologer and Prisoner begin with a staff and a spell; another class can adopt sorcery after obtaining a staff, a spell and sufficient Intelligence. Equip the staff, memorize a spell while resting at a grace, then use the staff to cast. Spells consume FP, so allocate some flasks to Cerulean Tears if needed; keep healing charges too.
For an early teacher, visit Waypoint Ruins in Limgrave, defeat the cellar's Mad Pumpkin Head and speak with Sorceress Sellen behind it. Her shop offers sorceries for runes. Check Intelligence requirements before buying. Maintain distance, cast after an enemy commits to a move, and carry a usable melee weapon for close fights or empty FP.
How to transition
Try the other style on regular enemies before committing many levels. Read the weapon or spell requirements, equip the necessary catalyst for casting, and adjust your flask allocation at a grace. You can mix styles, but spreading early levels across too many attack attributes may delay the requirements and health your current setup needs. No exact level, mandatory weapon or fixed build is required.
